[...] JoikuSpot Premium was described by Sushant on this post as: one of the most innovative solutions, the kind of which I haven’t seen on other mobile platforms yet. JoikuSpot uses your 3G/HSPA to convert your 5800 to a full fledged wireless router. This means you can now connect n umber of Wi-Fi enabled devices on your very own Wi-Fi hotspot which is as mobile as you! This is the perfect application to tease the iPhone/iTouch users with, making them rely on our symbian devices for their Wi-Fi needs. [...]

Modern Linux with NetworkManager works _very_ well with S60 3G phones - I have a Fedoara 10 Asus laptop, my wife an Ubuntu 9.04 Netbook Remix Aspire One, and both just work great with the wired usb connection to her E71; Just be sure to have the right settings! Joiku is awesome, but on the move, it's such a draw on the battery, it's really, as you quoted, a nice tool to tease some less discerning friends.... No kidding, in real life, I use it in meetings, to set up an access point for all participants, allowing us to take work "anywhere". Really anywhere :) So cool.

Tethering over WiFi using this app results in a faster connection for me that the one over BT with Nokia software. I was getting about 500kbs over BT, but I get 2mbits over WiFi. The battery life sucks though, I can barely get 2,5h.

You say there are no modem drivers for the 5800 in Linux or Mac, yet I regularly use my phone as a modem through bluetooth with my Macbook.
See the Nokia website for a howto.
Cheers :)
